Title: Mexican Potatoes

Yield: 4 Servings

1lbPotatoes, mashed -- coarsely
  (4 large)
1/4cOnion, diced
1cTomatoes -- diced
1/2tsFresh ground black pepper
  To taste
1/2tsHot chili pepper -- to taste
  (1/2 to 1)
  Salt to taste
1 Clove garlic -- pressed or
  Minced

Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
